Cream Pancakes

These are a favourite from my Mum's "Old Fashioned Cookbook." They are dense and heavy and if you can eat more than 2 you are an impressive glutton. They are perfect with some fresh chopped fruits and even cinnamon spread. There density makes them perfect for making breakfast sandwiches, you can add the maple syrup into the batter for them.

If you have a chance, try them... You will love them. :)


Cream Pancakes
  • 2 cups flour
  • 1/8 teaspoon of salt
  • 2 tablespoon baking powder
  • 2 eggs
  • 1 cup milk
  • 1/2 cup 10% cream.

  1. Combine dry ingredients in a bowl, mix together. Then add the eggs, milk and cream. Stir until smooth and lumps are gone.
  2. Pour onto a griddle or skillet that has been greased. (I use veggie oil and a skillet.) Cook until both sides are golden brown.

Cabbage Soup

​1 tablespoon vegetable oil​
1 onion, chopped​
1 pound smoked sausage, sliced​
3 cups water​
1 head cabbage, cored and coarsely chopped​
3 carrots, sliced
3 stalks celery, sliced​
1 tomato
1 (28 ounce) can diced tomatoes​
1 carton chicken stock
salt to taste​
2 bay leaves
1 tbsp garlic powder
2 tbsp italian seasoning
Pepper to taste
6 medium mushrooms sliced

Heat the vegetable oil in a large pot over medium heat, and cook the onion until lightly browned. Place sausage in the pot, and pour in water and broth. Mix in cabbage, carrots, celery, tomato, and crushed tomatoes. Season with salt, bay leaf. Bring to a boil. Reduce heat to low, and cook at least 1 hour, until vegetables are tender.

Taco chicken!

1/2 tbsp garlic powder
1 large tomato
1 small onion
1/4 salt
2 tbsp taco seasoning
2 tbsp olive oil
1/2 cup of mozzarella cheese cubed
1 tsp italian seasoning
1 tbsp lemon juice
1/2 tsp cayenne pepper
1/2 tsp rosemary spice

You can also add some italian dressing as well.

Pour the mixture over chicken in a casserole dish, cover and bake at 375 for approx 1/2 hour. Serve with some of the juices poured over the chicken.

Pea Soup with Ham

Tonight I thought I would try something different out... So I made split pea soup with ham. Turned out delicious, however, as pea soup always looks, disgusting. I have never tried it before but it's amazing and I love it. I never thought something that looked like mush could be awesome. I changed it up a bit and blended some of the ham with the soup. =D

Ingredients

1 large slice of ham
1 tbsp vegetable oil
1 large onion, finely chopped
2 each carrots, sliced
2 stalks celery, finely chopped
2 cloves garlic, minced
2-3 bay leaves
1/2 tsp each salt and pepper
4 cups chicken stock
2 cups dried yellow split peas


Skin the slice of ham and remove any large portions of fat. Chop the ham into small chunks.
Put Chicken stock and water on to boil, when boiling add salt, pepper and bay leaves.
Add oil.
Chop onion, garlic,celery and carrots, add to broth
Add ham and peas to broth and cook until peas are soft.
Remove half the soup mix and put in blender.
Blend on high until pureed.
Cook for another 30 min and remove from heat.
Allow to cool completely and refrigerate for 2 days.
Heat and serve.






By the way, got a new camera for christmas. Much better picture quality to drool over.

Delicious =P

So I have decided the drink of the season is actually from Tim Horton's this year. And I totally am sipping one now and watching 2012 ^.^

I have proclaimed that an XL WHITE hot chocolate with 1 chai tea bag left in.

The idea was given to me by my bestie and now I have stolen it for my own yummy guilty pleasure. =)

Next time you in your local Tim Horton's have them make you one. It's delicious and you'll love it.

Cuervo Cookies - How to bake for the holidays!

Cuervo Cookies

>I know it's a little early, but it is time to start baking for the holidays. This is the BEST Christmas Cookie recipe EVER! :)

>Christmas Cookies

>1 cup of water

>1 tsp baking soda

>1 cup of sugar

>1 tsp salt

>1 cup of brown sugar

>Lemon juice

>4 large eggs

>1 cup nuts

>2 cups of dried fruit

>1 bottle Jose Cuervo Tequila

>Sample the Cuervo to check quality. Take a large bowl, check the Cuervo again to be sure it is of the highest quality, pour one level cup and drink. Turn on the electric mixer. Beat one cup of butter in a large fluffy bowl. Add one teaspoon of sugar. Beat again. At this point it's best to make sure the Cuervo is still OK, try another cup just in case.Turn off the mixerer thingy. Break 2 leggs and add to the bowl and chuck in the cup of dried fruit, Pick the frigging fruit off floor. Mix on the turner. If the fried druit gets stuck in the beaterers just! pry it loose with a drewscriver. Sample the Cuervo to check for tonsisticity. Next, sift two cups of salt, or something. Check the Jose Cuervo. Now shift the lemon juice and strain your nuts. Add one table. Add a spoon of sugar, or somefink. Whatever you can find. Greash the oven. Turn the cake tin 360 degrees and try not to fall over. Don't forget tobeat off the turner. Finally, throw the bowl through the! window, finish the Cose Juervo and make sure to put the stove in the dishwasher.

CHERRY MISTMAS

Lunch Date

So today I woke up to a message or seven from my aunt. She was headed into town near where I lived and decided that it would be nice if her, I and my grandmother went out to lunch. When I called her back to say I would love to she happened to be only 20 minutes away.

So after much scrambling to get showered, dressed and put my face on, I met them at my lobby and to my delight my Aunt definitely has a preggo belly. I don't know If I have mentioned it before but we found out earlier this year that she was having a baby and it turns out (Like I predicted!) that she will be having a baby girl. I couldn't be more pleased. However, my aunt already is a little bit high strung and now with the whole baby thing, she is a little strange too. Not that I mind, my whole life is filled with weird people... but apparently if you do not feed my aunt when she is hungry she turns into a raging she-devil who threatens to eat the poor waitress.

We ended up at Boston Pizza for lunch, and we had some cactus cut fries (which were delicious.) and I ordered a NY strip-loin steak with prawns and scallops and some french fries. My aunt got ravioli and lobster and my grandmother got a porkchop and linguine. I think my only complaint was I asked for my steak medium rare and ended up with a bleeding hunk of meat that was somewhere between blue rare and rare. I honestly tried to eat it and at times I love a good blue rare steak, but just not that early in the afternoon. I ended up asking my waitress if we could cook it a touch more and to my delight they brought me back a perfectly seasoned delicious medium rare steak and gave us 25% off the bill. The manager even came to make sure it was alright. I couldn't have asked for better service to be honest. My aunt absolutely hated her lobster, but that we can chalk up to the fact that the dish itself was not a well designed meal... the intense flavour of the spicy sauce and the cheese stuffed ravioli overpowered the delicate taste of the lobster.

My grandmothers meal was good, however the pasta could have been cooked a touch better. The bite I had of her pork was heavenly. Honestly, one of the best pork chops I have ever had and we spent the better part of the meal trying to figure out what this delectable yellow vegetable they served her was. We finally gave up and asked the waitress who informed us that it was yellow carrot. I made a mental note to buy some next time I am at the grocery store.

Other than that I spent my day folding laundry and putting on the last load to wash. I also decided to neglect my workout for tonight to give me the chance to ease back into the routine. However, come hell or high water, I will be doing Yoga tomorrow night!

I also am making big big plans to attend fleming college, I have made up a list of all the programs that I would like to take and there is well over 30 that I can complete. Most of them can even be done online in some fashion. It should be an interesting experience and I look forward to keeping everyone updated on my progress.

As for my relationship, it is still on the rocks.... I am not sure if or how it can be fixed. At this point, I am trying to work on me, I will worry about the rest later.

Caffé "Affogato"

Trust me... your mouth is going to sing my praised for a month....

Vanilla Ice Cream - 2 scoops
Hot strong coffee - about 1/2 cup.

Put the ice cream in a bowl, pour your coffee or espresso over it... voila! You're done. Now eat. Quickly.

(You can also throw in a bit of chocolate sauce or use espresso in place of the coffee. )

Try it. I will post pictures from next time I make some!

Heart Attack Wrapped in Delicious.

Sooooo, I got a weird ideedee tonight and it lead to an amazing meal as well as it took 10 years off my life.

I thought that bacon, chicken, shake and bake and BBQ sauce would work really great together... Soooooo I decided it should happen.

Ingredients:

5 chicken legs
1/2 cup BBQ sauce (I used Hickory)
3/4 lb of bacon
Shake 'n' bake

I started off by rinsing the chicken legs and patting dry with a paper towel. Then I proceeded to use a basting brush to coat the legs in BBQ sauce.





After coating each one, I wrapped them in bacon (Using approx. 2 slices each.)
After wrapping them up in bacon, roll each one in the shake and bake, coating thoroughly.






Then put the chicken in the oven (I cook at high temperatures so 425.) and make sure to use lots of tinfoil on the baking sheet!






It should be done in about 45min.
Now dig into the most delicious thing you have ever eaten.

Cajun Chicken and Shrimp Pasta

Sooooo, I've decided to post some of my favourite recipes on here and the modifications I made. Don't judge me too harshly on the photo... if you want pretty food go look at advertisements, I am working with what I got which happens to be a cell phone.

This recipe I adapted from Here. A blog called The Pioneer Woman, let me tell you this site has some of the most delicious food I have ever seen in my life...

My recipe is a little bit different.

Ingredients:
1 medium sized yellow onion
2 large chicken breasts
14-17 medium shrimp (cooked, peeled and de-veined)
1/2 of 3 peppers (I used Yellow, Green and Red)
2 tomatoes
1/2 cup of cream (I used half and half)
1/2 a box of Campbell's Chicken soup broth (About 2 cups)
2 tbsps margarine
2 tsp garlic powder
1 tsp cayenne pepper
3 tbsp cajun spice (Mine came from The Keg)
3 tbsp vegetable oil
1 lb pasta (I used spaghetti)
Salt and pepper to taste


How did I make this delicious meal that requires me to wear fat pants after eating you ask!?

-Throw 1tbsp margarine, the vegetable oil and 1/2 a cup of the chicken broth into a frying pan and melt together over low heat.
-Slice your chicken into short thin strips and toss into the frying pan, turn your heat up to med-high. Cook until browned.
-While the chicken is cooking, chop your peppers into thin 1 inch long strips, cut your tomatoes into small pieces and dice your onion.
-Once the chicken is finished cooking, add the veggies and sprinkle in about 1/2 of your spices.
(Now would be a great time to put the water on to boil for your pasta)
-Add about 1 cup of chicken broth and let simmer. Stir occasionally.
-After about 5 min put in your cream and stir. This is where you should add your shrimp in, as well as the rest of your spices.
(Your water is boiling! Don't forget to put in your pasta to cook!)
-Add more pepper and the rest of your margarine, because I said so... we don't skimp on calories here!
-In about 5-10 min your sauce should be thickening and your pasta should be just about done. Throw in that last little bit of broth and stir.
-Drain your pasta and turn the heat down under the frying pan to low... mix together in the pan and serve!


Warning, it looks amazing but this is a VERY heavy meal! Also you are going to want to eat this forever so make enough for lunch tomorrow too.


Small tip for those of you who like to cook with booze, add some beer or white wine to it instead of so much broth.... it's amazing-er-er-er-est. =)
